Ingredients

  • 1 can pumpkin puree
  • 3 eggs
  • 1 cup pitted dates
  • 1 teaspoon vanilla
  • 2 cups rolled oats
  • 1 teaspoon baking soda
  • ½ teaspoon fine sea salt
  • 2 teaspoons pumpkin spice
  • 1 teaspoon cinnamon

Instructions

  1. Ask a grown up to preheat the oven to 350 F
  2. Add the ingredients to the blender
    • Pumpkin puree – 1 can
    • Oats – 2 cups
    • Cinnamon powder – 1 teaspoon
    • Pumpkin Spice – 2 teaspoon
    • Dates – 1 cup
    • Baking Soda – 1 teaspoon
    • Sea Salt – 1/2 teaspoon
    • Vanilla – 1 teaspoon

  1. Break 3 eggs in a bowl. Remove shells (if any)
  2. Transfer the eggs to the blender

  1. With a grown-ups help, blend everything until smooth
  2. Scoop into silicone muffin cup lined muffin tin. And bake for about 20 minutes.
  3. Let cool for 15 minutes and then enjoy!
