Pumpkin Muffin

A quick blend and bake, and you have these super easy and delicious muffins. Yes, it is easy for a toddler to almost entirely make it themselves

Ingredients
  

  • 1 cup pumpkin puree
  • 3 eggs
  • 1 cup pitted dates
  • 1 teaspoon vanilla
  • 2 cups rolled oats
  • 1 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 2 teaspoon pumpkin spice
  • 1 teaspoon cinnamon

Equipment

  • Food Processor
  • Electric Can Opener
  • Measuring Cups and Spoons

Method
 

  1. Ask a grown up to preheat the oven to 350 F
  2. Add the ingredients to the blender
    1 cup pumpkin puree, 1 cup pitted dates, 1 teaspoon vanilla, 2 cups rolled oats, 1 teaspoon baking soda, 1/2 teaspoon fine sea salt, 2 teaspoon pumpkin spice, 1 teaspoon cinnamon
  3. Break 3 eggs in a bowl. Remove shells (if any)
    3 eggs
  4. Transfer the eggs to the blender
  5. With a grown-ups help, blend everything until smooth
  6. Scoop into silicone muffin cup lined muffin tin. And bake for about 20 minutes
  7. Let cool for 15 minutes and then enjoy!
